Why would my 23 year old boyfriend rather play World of Warcraft then come out to dinner with me?

Because to get anywhere in any game that's like World of Warcraft you have to make a commitment. And if you don't commit then you're wasting your time and money lol. But I agree with you that it is immature and yes it is normal for a WoW player to blow off something in real life because he/she has obligations with his/her guild.
